Pinky Cream Cheese

Still remember the 2kg cream cheese I bought last month?

I used up 1kg and the balance was spoilt..Thanks to the pink microorganism which I have no idea what is it...It seems like my microbiology knowledge I learned during my degree has gone down the drain. haha...

Gross or nice?

The 800g cream cheese is now in the garbage dump somewhere in Penang.

Coffee Walnut Muffins

Hello everyone! I am back again with more yummy stuffs!

This time I made muffins..I bought this recipe book for quite some time and didn't manage to try out the recipe until last week. I finally took out the book and tried one of the recipes.
I decided to bake coffee walnut muffins since I have all the ingredients needed.
This recipe can make 12 pcs of muffins.

Ingredients needed:
125g walnut halves
150g butter
150g granulated sugar
3 egg whites
4 egg yolks
1 tsp vanilla extract
150g plain flour
1 tsp baking powder

For the coffee icing: ( I skipped this part, too lazy to do the icing)
1 1/2 tablespoons milk,
lil bit of butter
1 tablespoon instant coffee
200g icing sugar, sifted
1 tsp vanilla extract

Get ready to chop the walnuts!
 1. Chop the walnuts into size that u desire.

Chop! Chop! Chopped walnuts

150g granulated sugar to be melted with the butter
 2. Melt the butter and sugar in a pan with low heat. Bring it to boil and cook for 2 minutes. Avoid burning the mixture by stirring constantly. Set aside.

Melted butter with partially melted sugar
 3. Whisk the egg whites in a clean bowl until stiff peak forms.

To test whether the egg white is well beaten, use a chopstick or knife.
 4. Add the egg yolks to the cooled butter sugar mixture. Add in the chopped walnuts, vanilla extract, flour and baking powder. Finally, add in the whisked egg whites.

 5. Spoon the batter to prepared muffin paper cups.

6. Bake the muffins at 180 degree Celcius for about 20-25 minutes.

The leftover batter, which is why the smaller size muffin

I added a few walnuts on top, looks good right?

Remarks: The muffins I made had no coffee taste as I skipped the icing part. You can add coffee granules to the mixture instead if you do not want to have the icing.

My 1st time baking Polo bun.....

I was very excited to bake my polo bun but the results? Not as good as I expected, maybe because of the recipe I followed was not really good. (Blaming the recipe, :D) Anyway, photos of my polo bun below...please do not laugh when u see the bun. They don't look like polo bun! I duno I have to score the topping with knife in order to get the pineapple pattern until I see other recipes.

Topping made of butter, flour, sugar .....

The dough after second proofing

The glazed dough
There is a blister on the dough. haha
The soldiers wear their helmets now.

And sent to the battlefield for war!

Looks like they had failed to defend their country. Lost! haha..

The injured and dirty soldiers, lethargic after the war.

I baked until so brownish, I thought the topping will crack and thus, give me the pineapple pattern. =_='''
Will try again next time.

It's the weekend again! Time to bake!

Finally, the weekend is here again which means it's time to try out some new recipe. This time, I decided to bake potato bread. Got this recipe from foodnetwork.com
Mashing the potato

Magnolia milk for the bread

The mashed potato was added to the mixture (butter, shortening, sugar etc.)
Flour was then added to the mixture. Kneading was very easy using the electric mixer.

The dough before rising

The dough after 40 minutes.

Second proofing

The loaves have doubled in size. Time to bake!

Almost done.

B2, the QC/tester was waiting under the table to test my potato bread.

My first successful loaf. (Not so dense as compared to my previous bread)

Not enough potato! Must put more potatoes next time.

A morning walk at Chowrasta Market + Tarts production :)

It's the weekend! So I went to Chowrasta market with my grandma to get some ingredients for my first blueberry cheese tarts order. Discovered some cheap baking wares and a shop selling pastry ingredients. What a valuable discovery! We had curry mee for our breakfast. The curry mee was not as good as I expected but appearance wise it looked good. :(

I asked the uncle to give me more "taupok" as I didn't want the cockles.
I exchanged the prawns with more "taupok" from my grandma. (that is why u don't see any prawns in my curry mee)
After finished eating, we walked around. The morning market was very busy indeed!
Any vege lover?
Who loves Lap cheong??

Got any Tau Sar Pneah? >_<'''
We were heading to Carnavon Street to buy ingredients for my cheese tarts!
And I bought a 2kg Cream Cheese!! 250g of cream cheese is nothing compared to a 2kg one!
I made 2kg dough which was enough for about 60 pcs of tarts. So I made egg tarts too.
The dough for the blueberry crusts
Tarts filled with cream cheese

Next step, add the blueberry on top of the cheese.
And give some swirling effect using satay stick
The 20 pcs cheese tarts are ready.

Credits to my grandma for pressing the dough into the tart cups.
