Coffee Walnut Muffins

Hello everyone! I am back again with more yummy stuffs!

This time I made muffins..I bought this recipe book for quite some time and didn't manage to try out the recipe until last week. I finally took out the book and tried one of the recipes. 
I decided to bake coffee walnut muffins since I have all the ingredients needed. 
This recipe can make 12 pcs of muffins.

Ingredients needed:
125g walnut halves
150g butter
150g granulated sugar
3 egg whites
4 egg yolks
1 tsp vanilla extract
150g plain flour
1 tsp baking powder

For the coffee icing: ( I skipped this part, too lazy to do the icing)  
1 1/2 tablespoons milk,
lil bit of butter
1 tablespoon instant coffee
200g icing sugar, sifted
1 tsp vanilla extract


Get ready to chop the walnuts!
 1. Chop the walnuts into size that u desire.

150g granulated sugar to be melted with the butter
 2. Melt the butter and sugar in a pan with low heat. Bring it to boil and cook for 2 minutes. Avoid burning the mixture by stirring constantly. Set aside.

 3. Whisk the egg whites in a clean bowl until stiff peak forms.

To test whether the egg white is well beaten, use a chopstick or knife.   
 4. Add the egg yolks to the cooled butter sugar mixture. Add in the chopped walnuts, vanilla extract, flour and baking powder. Finally, add in the whisked egg whites.


 5. Spoon the batter to prepared muffin paper cups.


6. Bake the muffins at 180 degree Celcius for about 20-25 minutes.

Remarks: The muffins I made had no coffee taste as I skipped the icing part. You can add coffee granules to the mixture instead if you do not want to have the icing.
